About us

A family farm in the heart of the Ticino Park

Azienda Agricola Cirenaica is the crop and pig farm of brothers Sandro and Giampietro Passerini in Robecchetto con Induno. We are part of the Parco Ticino – Controlled Production brand, our farm is registered and approved by the Parma Ham Consortium, and our salumi are made in our own EC-approved artisan salumificio.

Our goal is environmental and social sustainability at every stage: we farm our fields with integrated agriculture, raise our animals with respect for their needs, follow simple recipes true to tradition, and pay attention to energy saving right through to waste disposal.

We also look after what risks disappearing: Scagliolo maize, an ancient non-hybrid variety, and the Varzese-Ottonese-Tortonese cattle breed, now endangered.

All our salumi are hand-stuffed in natural casings, with no lactose and no chemical additives.

From field to table, without changing hands

Every stage of production is managed on the farm and nothing is outsourced. That is why we know the origin of everything we sell.

  1. We grow

    About 5 hectares of winter cereals, farmed with integrated agriculture. Most of the harvest feeds our own animals.

  2. We raise

    Pigs on straw bedding and Varzese cattle, fed without GMOs and without meat or fish meal.

  3. We craft

    In our EC-approved salumificio: butchering, processing, stuffing in natural casings, drying and curing.

  4. We sell

    Directly in our farm shop. A short supply chain, zero kilometres.

Our animals

Space, straw and time

Our pigs come from selected crosses between several breeds: lean, flavourful meat, low in cholesterol and particularly suited to salting and curing the great Italian salumi.

After weaning, the pigs live in pens with straw bedding and, from five months, in small groups of eight. More space for each animal and the freedom to root, explore and chew: a less stressful environment that takes more work and more land, but makes all the difference.

Their feed is made of maize, barley, wheat, field peas, soy, bran, vitamin and mineral supplements and dairy by-products, balanced by age, weight and season. No meat or fish meal, no GMOs.

The Varzese, an ancient breed worth saving

Alongside our pigs we raise cattle of the ancient Varzese breed: little meat, but of outstanding quality, very lean and rich in iron. They eat only forage, cereals and pulses grown by us.
